Raw Milk French Style Cheeses
Coated with vegetable ash and mold ripened.  These cheeses are truly a labor of love.  They require a lot of attention and a specialized climate.  Ash creates an alkaline surface and sharper flavors beneath the earthy mushroomness.
Do not store wrapped in plastic wrap!  Store you cheese in a container and open daily to let it breath.

Their ranch is located in a pristine environment, fed by live water near the mouth of the watershed.

The Highline Ranch is surrounded by mostly public land, and Bar R cattle are not exposed to the contaminants found where neighboring large scale conventional agricultural or other industrial operations exist.

These cattle are on grass year-round.  No hormones, pesticides, or herbicides are used on the Highline Ranch.

Slightly aged chevre packed with herbes de Provence and bay leaves, chive blossoms and peppercorns in a blend of extra virgin olive oil and grapeseed oils.  When the cheese is gone use the oil to make a salad dressing or use for dipping bread or tossing pasta. Pasteurized

 

-Chevre-8oz $8.00

440 Free Ranging Chickens

The 440 processed their meat birds this weekend, and they are now up for sale. Whole frozen birds are $3.50/lb and average 5lbs.  Raising and processing quality chicken is a labor-intensive process, and we are proud to serve an outstanding product from an animal that enjoyed a high quality of life.  See the video footage below of our meat birds before processing.
